Looking for a great location for a lunch date, or perhaps just somewhere to grab that morning brew? There’s no need to look further than NORSK., the Scandi-inspired café and coffee shop that’s changing the way we think about eating and drinking. We took the journey over to Haddenham, a village just outside Aylesbury, to try some delicious, mindful food in an intimate environment.

It must be very satisfying for Cathrine Tjore and her husband Simon Keeley to now be the proud owners of NORSK., which is situated in the picturesque surroundings of Haddenham. Once a humble coffee van named Little Italy providing delicious, home-brewed coffee to the local area, business has boomed and, since the rebrand in October, Cathrine and Simon have been able to bring her Norwegian roots to Buckinghamshire.

Haddenham is the perfect place for NORSK. to be set up, a quiet and peaceful hamlet lying less than ten minutes from Aylesbury, ideal for getting away from the hustle and bustle of everyday life. The shop is a wonderful space too, with an intimacy and warmth created by the devotion to the Scandinavian concept of ‘hygge’, a type of mindfulness that takes a simple and clear approach to life. The influence can be seen around the room, with a lack of clutter and plenty of space to move around the rustic-chic interior, with untreated wooden tables on the shop floor and plain white tiles on the walls behind the till creating a clean but comfortable vibe. Some of these Scandi-based interiors are on offer for sale too, meaning you can bring some mindfulness home with you.

This minimalist approach is also felt in the size of the menu; rather than overloading the mind with endless options, the menus are concise and simple, providing Scandi-based cuisine at affordable prices. However, when it comes to flavour, NORSK. doesn’t hold anything back – everything has a rich tapestry of flavours, from the salmon open-sandwich that delights the senses by adding the subtle flavour of cucumber with the strengths of horseradish, lemon and dill, to the carefully spiced, curry-marinated cauliflower that provides a flavoursome base of the roasted cauliflower salad. If you’re not looking for a whole meal, there are plenty of cakes and pastries on offer, too.

If you’re in need of a little extra headspace and some wholesome food, NORSK. is the perfect place to get a coffee, a hearty meal and decompress away from the busyness of everyday life.
